While we might not necessarily recommend that you enjoy a slice of our famous Victoria Sponge every day as the eponymous Queen Victoria did with tea daily, we do suggest that digging into one of ours at least once! Vanilla sponge, whipped cream and layered with strawberry jam and sliced strawberries, this is just one of those desserts that make you go ‘Mmm..’

Monday 19th is here, so what’s changing at Bakery on the Hill….?? . ….Absolutely nothing. 😊🥐 . We are more than happy with how we have been setup for the last few months, and it’s taken a lot of investment and effort to make it so. Ultimately though, our customers are happy, the dough still rises and our staff and locals remain safe and well - so why change what’s working!👌🏼🍞 . We are ever hopeful for the day we can remove all signs of this last year, but we feel no need to rush ahead when there are so many and so much we still want to protect. . Our true “bread and butter” is our Bakery Team - many of whom are younger and yet to be vaccinated or 2nd dosed, or have been shielding throughout. It’s for this reason alone that we will continue to wear masks in store and ask, please will you too? 🙏🏼🧑‍🍳 . Furthermore, we recognise many in our community will continue to be at risk and we refuse to make our little part of the world less-accessible for them. Queueing outside continues, serving screens remain in place, and pre-ordering and payment for collection is still possible. . We see a busy but exciting summer ahead, with likely a few more challenges to come, but a much needed boost for the whole town. We cannot think of a better way through it than safely, together and with scones 😊🙌🏻 . Thank you for your continued support - see you all soon ♥️

Spring has Sprung and that means Simnel Cakes 🌼💛 . Can you believe it’s March again? What a year it had been since our last batch of Simnel Cakes - but once again, Clare is happy to be back on her favourite bake of the year, over in Bourton @bakeryonthewater 💛 . Every single part of the Simnel process is done by hand in our little bakery business. First comes the weighing, measuring, mixing and baking downstairs.... swiftly followed by hand-decorating upstairs. Each of the marzipan balls of rolled out by Clare this morning (11 per cake of course), the icing flowers rolled out and cut cut, and each little chocolate egg hand picked! All to be iced onto the top to complete the final, delicious treat! . The recipe itself, developed by Clare and her Dad, Peter (the 2nd generation 👨‍🍳) many moons ago - staying very close to that which the 1st generation baked too! . As a family bakery, we all delight in the nostalgia of the traditional here - we wouldn’t have it any other way!
